Step by Step Method

Step 1

Heat non-stick skillet over medium heat. Swirl in the oil, then add the shallots and garlic. Cook, stirring frequently, until translucent, 3 - 4 minutes. Add the tomato paste and cook, stirring constantly, until fragrant, 3 - 4 minutes. Add the chopped tomatoes and cook over medium heat until slightly thickened, about 10 minutes. Remove from heat and cool slightly.

Step 2

Puree the tomato mixture in a blender. Add the parsley, vinegar, and pepper; pulse until the mixture is an even texture. Serve in small cups with the shore dinner.
