Ingredients

  • 2 to 3 teaspoons olive oil
  • 1 shallot, minced
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups chopped tomatoes (fresh or canned)
  • 2 tablespoons cilantro (or flat leaf parsley)
  • 1 tablespoon balsamic vinegar
  • Freshly ground black pepper, to taste

How to Make

  • Step 1: Heat non-stick skillet over medium heat. Swirl in the oil, then add the shallots and garlic. Cook, stirring frequently, until translucent, 3 - 4 minutes. Add the tomato paste and cook, stirring constantly, until fragrant, 3 - 4 minutes. Add the chopped tomatoes and cook over medium heat until slightly thickened, about 10 minutes. Remove from heat and cool slightly.

  • Step 2: Puree the tomato mixture in a blender. Add the parsley, vinegar, and pepper; pulse until the mixture is an even texture. Serve in small cups with the shore dinner.
