"This is my favorite way of making bruschetta. Rubbing the garlic clove over the bread adds so much flavor and puts it over the top."

Step 1
In bowl, combine tomatoes, basil, minced garlic, and salt and pepper; let stand for 15 minutes or cover and refrigerate for up to 4 hours.
Step 2
Slice bread in 1-inch-thick slices. Place on baking sheet and broil until lightly browned on each side. Rub cut side of garlic clove over one side of bread; brush with olive oil.
Step 3
Spoon tomato mixture over top.
Step 4
Sprinkle with Parmesan (if using).
Step 5
If tomato mixture has been refrigerated, broil bruschetta for 1 minute.
Step 6
Makes about 16 slices.
