Step by Step Method

Step 1

In a food processor combine the first 3 ingredients (mayo - garlic) and process until smooth. Cut baguette lengthwise and spread with the dressing.

Step 2

Toss avocado slices with the lime juice, salt and pepper. Spread avocado slices on the bottom of the french bread and then layer the tomatoes over the avocado slices.

Step 3

Close sandwich and cut into 4 equal portions.

Wow, this is one tasty sandwich and it is sure to keep the vampires away, lol. The garlic really shines through in this sandwich. I used gluten-free French baguettes which worked perfectly. This is a keeper!

What a great lunch we had today!! I used whole grain bread and added a couple slices of deli ham, but everything else as written. I love avocado!!

Wonderful sandwich! Love the combo of the lime and cayenne, gives a bright bite! Finished it with a good grinding of pepper. Will be making this again for sure. Thank you for sharing another keeper Ellie! Made for Billboard Recipe Tag.
