"Not much of a recipe - but a great tasting combination that I wanted to share. I used skinless MSG free breakfast links but kielbasa would taste excellent and zucchini could stand in for the yellow squash, if you prefer."

Step by Step Method

Step 1

Cut sausage links into thirds. Saute in skillet and drain. Remove sausage and keep warm.

Step 2

In 2 tsps of the sausage drippings, saute onion until slightly soft. Add the sliced squash, seasonings, and broth/water if necessary. Lower heat and continue cooking until the squash is tender. Return sausage to the pan, stir until combined well. Serve over cooked rice, if desired.

I made these as a side dish to these beautiful ham chops I got at the local Amish market. This dish complimented it perfectly. Of course thyme is one of my favorite herbs. Made for Alphabet Soup tag.
