Step by Step Method

Step 1

In a large dutch oven over medium heat melt the butter and then add the squash and shallot and saute for a minute. Add cider and rosemary and then bring to a boil; reduce heat and simmer, covered for 20 minutes or until squash is tender (fork pieces easily).

Step 2

Remove cover and increase heat to high and cook until liquid is reduced. Season with salt and pepper.

How tasty!! After all these years of cooking, I've never used delicata in my cooking…and how sad is that. This is one delicious side dish and what's even better is that it doesn't contain additional sugars like many other dishes. The subtleness of the rosemary was perfect in this. Awesome! Love the aroma of the fresh rosemary and sweetness of the apple juice while it was cooking. DH was in heaven with this recipe (as was I)! We love delicata but the availablity is only at the farm in the fall and not in the stores. Thank you so much for this keeper recipe Ellie! Made for Billboard Recipe Tag.

These were killer squash! We both had seconds and loved it. The only thing I did different is add some cinnamon. I did cut them into rounds, but they softened. I used apple juice and not cider because that's what I had.
