Ingredients

The ingredients are:
  • 1 box (12 oz) pork sausage links (like Hormel Little Sizzlers or Farmland brand)
  • 2 medium yellow squash, peeled and sliced (about 1/4" thick)
  • 1 medium sweet onion, chopped
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Chicken broth or water (if needed)

How to Make

  • Step 1: Cut sausage links into thirds. Saute in skillet and drain. Remove sausage and keep warm.

  • Step 2: In 2 tsps of the sausage drippings, saute onion until slightly soft. Add the sliced squash, seasonings, and broth/water if necessary. Lower heat and continue cooking until the squash is tender. Return sausage to the pan, stir until combined well. Serve over cooked rice, if desired.
