"A great Greek-style finger-food appetizer recipe I made a few years ago and now will make again this year for my New Years party! Be prepared to eat more than a few of these, they are that good! To save time make the spinach filling 1-2 days ahead and you can fully prepare and bake them as stated a day ahead, cool then refrigerate, when ready to serve heat them in low temp oven before serving.. SO GOOD!"

Step by Step Method

Step 1

In a large skillet heat olive oil. Add in onion; cook until tender. Add garlic; cook 1-2 minutes more.until tender. Stir in spinach; cook over medium-low heat for about 3 minutes. Transfer to a large bowl; add in Parmesan, mozzarella and feta, eggs, bread crumbs, salt and pepper. Set aside.

Step 2

Place ONE sheet of phyllo dough on a work surface with a long side facing you. (Keep remaining phyllo covered with plastic wrap to prevent it from drying out).

Step 3

Spray the one sheet with butter-flavored spray, then cut into four 9-inch x 3 1/2-inch strips.

Step 4

Place a well-rounded tablespoon of filling on lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip.

Step 5

Spritz end of dough with spray and press onto triangle to seal. Turn triangle and spritz top with cooking spray. Repeat with remaining phyllo and filling.

Step 6

Place triangles on baking sheets coated with cooking spray.

Step 7

Bake in a preheated 375 degree F oven for 10-12 minutes or until golden brown. Yield: 4 dozen.
