"This recipe comes from Dairy Australia, it uses 3 of my favorite cheese's - mozzarella which is divine when it melts , and cheddar which is my all time favorite, and last but not least the wonderful flavors of parmesan cheese, tops this amazing omelette off. I have posted the recipe as written, but I cooked the mushrooms at the same time as the omelette when I made this and it worked out better I.M.O."

Step by Step Method

Step 1

NOTE: I have posted the recipe as written, but I cooked the mushrooms at the same time as the omelette when I made this and it worked out better I.M.O.

Step 2

Whisk all the eggs and cream in a bowl until just combined.

Step 3

Combine all three cheeses and only two tablespoons of the parsley in a separate small bowl.

Step 4

Pour half the egg mixture into a lightly buttered non-stick fry pan ~ to just cover the base & cook over a high heat until eggs are almost set. Place half the cheese over the omelette and fold in half. Slide omelette onto a serving dish, keep warm, and repeat process with remaining mixture.

Step 5

Melt butter in the same fry pan and add mushrooms and saute until softened and cooked to your liking. Season to taste and stir in remaining parsley.

Step 6

Serve mushrooms over the omelette & top with the extra parmesan cheese.

Three cheeses I always have on hand, so I had to try this. I followed your suggestion and cooked the mushrooms as I was cooking the eggs. This was a perfect “breakfast for dinner “ with a slice of toast. I ate half and will eat the other half for lunch today.

This recipe looked as appealing as the photo and tasted as good as it looked. The ingredients came together to make for perfect, made half for an early start to my day and followed up with the second serving for light lunch. This is an excellent recipe for special weekend meals and great for light lunches. This will see to repeats!

This was a fantastic omelette, our granddaughter asked for a second helping, lol. Super cheesey and very filling!! *Updated Review* I made this again for hubby and I and he said this is favorite omelet recipe. This made for a great brunch.

Loved every mouthful, scaled back for 1 serve using two small eggs and halved the rest of the ingredients but when making again I will double the mushrooms otherwise the mushrooms were buttery earthy and meaty and the omelette was light and creamy with the taste of the sharp cheddar, the stringy mozzarella and nutty parmesan, thank you Tis for a great breakfast for lunch made for Pick Me tag game.
