"Much more like Crepes but the original recipe called them pancakes. These are absolutely wonderful. This recipe is from an old community cookbook. I make this in the kitchenaid mixer."

Step by Step Method

Step 1

Beat sugar and eggs.

Step 2

Add salt and mix.

Step 3

Add flour and milk alternatively-mix until smooth and without any lumps.

Step 4

Mix in vanilla.

Step 5

Heat a crepe pan over medium-high.

Step 6

When the pan is hot enough, rub butter all over the pan and pour a THIN layer of batter- tilt the pan so that the batter covers the bottom.

Step 7

Cook until lightly browned on one side, then flip and cook lightly on the other side.

Step 8

Serve with maple syrup or jam.

We love crepes topped with fresh fruit and syrup. It's a great way to start the day so I wanted to make these. They tasted so good that we ate more than expected. We will have them again!
