Step by Step Method

Step 1

Preheat oven to 400°F. Place the cherry tomatoes in an oven-safe baking dish. Pour the olive oil on top, and season with salt and pepper. Toss until well combined.

Step 2

Place the feta block in the middle of the baking dish surrounded by the cherry tomatoes, and flip a couple times to coat it with the olive oil and seasoning.

Step 3

Bake in the preheated oven for 35 minutes, until the cherry tomatoes burst and the feta cheese melts.Immediately add the garlic and basil leaves to the cooked tomatoes and feta and toss everything to combine.

Step 4

Transfer the cooked pasta to the baking dish and toss to combine. Garnish with more fresh basil and serve warm.

We just had the best lunch. Wow, was this pasta dish ever good Fem. It was even better than I thought it would be. Great flavors and textures. I loved it all. kudos on making it into my Best of Cookbook for 2021. The Greek sheep and cow feta that I used broke down beautifully, adding a delicious flavor throughout the dish. The sweet cherry tomatoes turned dark and delicious; bursting beautifully to distribute their goodness into the homemade fusilli. I felt that the fusilli was a great noodle for this dish, it collected all the seasonings, tomato juice, olive oil and the feta, allowing it to cling in its twists and turns. The freshly cut basil, sea salt and fresh ground black pepper took it over the edge. I highly recommend this lovely dish to everyone.
