Step 1

In a mixing bowl, mix together the tahini, lemon juice and garlic. Whisk in the olive oil and add the salt and pepper. To the dressing, add the chickpeas, tomatoes, parsley and scallions. Mix to combine. Adjust seasoning, if needed. Serve!

We really liked this mid-eastern style salad. I made 1/2 batch and served it over a bed of lettuce. It definitely needed to rest for a while before serving - the garlic was too sharp when I tasted it right away - and I love garlic!
