"One of my all time favorites and it is always well received no matter where I take it, with many recipe requests. I make sure I give this a lot of time to chill in the refrigerator. It is best when made overnight. When I do that I omit the cheese and cooked bacon until serving time, then I just mix it in right before serving so it doesn't get mushy. I have been known to add in fresh chopped broccoli too!"

Step by Step Method

Step 1

Wash and cut the potatoes into bite size pieces.

Step 2

Cover with water and boil just until fork tender, about 20-25 minutes.

Step 3

Drain and cool the potatoes. Once they're cool, mix in the sour cream and mayonnaise.

Step 4

Add the onions, chives, and cheese.

Step 5

Salt and pepper to taste.

Step 6

Top with extra shredded cheese and bacon and serve.

I scaled this recipe back for 2 and it this recipe is almost a reincarnation of my dear departed dads recipe (he never added chives but a great addition and he used a mix of mayo and white vinegar as against the using sour cream and mayo which I enjoyed). Though I did divert from the recipe and microwaved the whole potato for 4 1/2 minutes (they were on the smaller side) and I also cooked my bacon in the microwave using recipe http://www.recipezazz.com/recipe/cook-bacon-in-microwave-or-frypan-14749 and then chopped up the potato while it was still hot and mixed in with the rest of ingredients though it wasn't till after all this was done and it had been in the fridge for a hour or so that I realized I had forgotten the grated cheese which when added when the potato is hot sorts of melds around the potato but either way it was a great trip down memory lane and a very enjoyable potatable salad.
