What a lovely fresh tasting salad this is. I used regular oranges because nectarines are not available here this time of year but they worked perfectly. Next time I make this I will shred the carrots instead of dicing them as the texture difference was to much for me. I will definitely be making this again, thanks for sharing this here ellie :)
