Step by Step Method

Step 1

Heat oven to 375.

Step 2

Spread almonds on parchment paper on a baking sheet.

Step 3

Sprinkle with sugar, and spritz with water.

Step 4

Toast almonds in oven until golden, about 10 minutes or so. Remove, and cool.

Step 5

Toss together spinach, strawberries, and onion.

Step 6

Whisk together sugar, vinegar, olive oil, mayonnaise, poppy seeds, salt, and pepper.

Step 7

Just before serving, drizzle salad with Raspberry dressing, and sprinkle with candied almonds.

This salad a great addition to our Mother's Day gathering. Served in a crystal salad bowl looked lovely and tasted like springtime! The strawberries are so super good this year, the spinach lush making for one great special day salad. I was unable to find the raspberry vinegar so improvised adding in juice from my home canned Brandywine raspberries. Will be looking for that vinegar next trip to the city.
