Ingredients

The ingredients are:
  • 1/2 cup almonds, sliced, or slivered
  • 3 tablespoons Splenda
  • 3 tablespoons water
  • 4 bunches (about 4 cups) spinach, washed and torn
  • 10 large strawberries, washed, hulled and quartered
  • 1/4 cup red onions, thinly sliced
  • Raspberry Dressing:
  • 2 tablespoons Splenda
  • 1/4 cup Raspberry vinegar
  • 1/4 cup olive oil, mild
  • 1/4 cup light mayonnaise, I use Kraft
  • 4 teaspoons poppy seeds
  • Salt and pepper, to taste

How to Make

  • Step 1: Heat oven to 375.

  • Step 2: Spread almonds on parchment paper on a baking sheet.

  • Step 3: Sprinkle with sugar, and spritz with water.

  • Step 4: Toast almonds in oven until golden, about 10 minutes or so. Remove, and cool.

  • Step 5: Toss together spinach, strawberries, and onion.

  • Step 6: Whisk together sugar, vinegar, olive oil, mayonnaise, poppy seeds, salt, and pepper.

  • Step 7: Just before serving, drizzle salad with Raspberry dressing, and sprinkle with candied almonds.
