Step by Step Method

Step 1

Rinse, hull, and slice strawberries and place in a large bowl.

Step 2

Mix with 1/4 cup sugar and stir to blend.

Step 3

Allow to sit, refrigerated, until strawberries are juicy, about 1 hour.

Step 4

Take a moist paper towel and dab it across the face of the tortilla (until tortilla is slightly damp only).

Step 5

Sift confectioners (powdered) sugar all over tortilla until it is reasonably covered.

Step 6

Flip over and do other side the same way.

Step 7

Take 1/4 of the sugared strawberries and place in the middle of the tortilla.

Step 8

Fold up bottom edge and roll up sideways, burrito style.

Step 9

Place burrito on serving plate.

Step 10

Garnish with whipped cream and a little more sifted confectioners sugar (if desired).

Step 11

Repeat with other 3 burritos.

Step 12

Serve at once.

Strawberries are very popular in Iceland. Grown in hothouses & imported, we luckily get them yr-round. They're also Siggi's favorite fresh fruit & have been on-sale at our grocery store. Making this easy-fix recipe for our family brunch dessert today was fated to happen. Except for only applying the powdered sugar glaze to the inside of the tortilla, I made them as written & assembled them right at the table one-by-one. No one waited for the others to be served. My SIL asked for the recipe, I gave it to her & she was amazed at it's simplicity. Thx for sharing this taste treat recipe w/us. - Edited to Add that this would be so pretty w/chopped fresh mint leaves added to the strawberries & then used as garnish. :-)

I made these as a special breakfast for my grandchildren and they ate them so fast I couldn't believe it! I used fresh strawberries that we picked at the farm down the road and used real whipped cream. They are so fabulous!

These are pretty good but the tortilla was a bit chewy. It might have been because I used whole wheat tortillas, I'm not sure. We really loved the taste though!

You are right about not living until you have tried one of these babies! They are extremely easy to prepare yet look great on a plate and you could serve them to company anytime. This is just what I was looking for when I had friends coming over unexpectedly. Something dellciously sweet and easy to make. It doesn't get any better than this simple preparation!
