Step by Step Method

Step 1

In a large pot over medium high heat saute the sausages (5 minutes or so).

Step 2

Stir in potato, onion and rosemary and continue cooking, stirring another 5 minutes or until onion is soft.

Step 3

Stir in peas and the chicken broth and bring to a simmer. Reduce heat to low. Cover and simmer until peas are tender (50-60 minutes), stirring occasionally.

Step 4

If desired soup can be thinned with water.

Step 5

Season to taste with salt and pepper.

Easy tasty I was concerned about the rosemary (I made tuna casserole with rosemary when I was 15 ,made my dad's eyebrows raise) but don't be it was good

Delicious. I cut recipe in half easily. I used Little Smokies cut in half. I don't usually use potatoes, but they were a nice addition. The rosemary was a nice touch, too, instead of my usual thyme. Will make this again.
