Step by Step Method

Step 1

In a small saucepan, combine raisins and sherry. Heat to boiling; remove from heat; let raisins soak at least 20 minutes.

Step 2

In small, nonstick skillet, toast pine nuts, stirring frequently, until lightly browned. Set aside.

Step 3

To prepare dressing, in small bowl, with wire whisk, combine oil, vinegar, thyme, oregano, salt, and pepper. Stir into sherry and raisins.

Step 4

In a large salad bowl, combine spinach, onion slices, and toasted pine nuts; toss with dressing. Serve immediately.

This is going into my Best file! We absolutely loved the dressing with the sherry and the raisins. When I realized I didn't have pine nuts I toasted up some pecans and they were great in there. I'm looking forward to making this salad at our next family get-together. I know everyone will love it!

Another winner Fem. 5 stars all the way, all day. What a lovely spinach salad. It was simple and refreshing allowing the dressing and raisins to shine. The pine nuts and red onion added nice textures. We loved it.

The raisins were heavenly! I wasn't sure about the sherry, so I used medium dry which was perfect for us. Will make this again often, also with other kinds of greens! Thanks for sharing!

Absolutely loved the raisins! I did not use the onions because I was already baking onions and we cannot handle too many onions in one serving. lol. I love a spinach salad, and this one was perfect. Thanks for sharing!

Lovely tasty salad that was perfect as a side with a French Canadian Tourtiere. the bought . This salad with it's sherry soaked raisins was so Mmmm it'll be made over & over again. I used sweet white onions instead of red (I had them on hand). The roasted pine nuts were great as the finishing touch. I give this a full 5 out of 5
