"I actually prepare this right on the grill in a disposable aluminum pan; but living in FL, I grill all the time. But this is just as easy prepared inside. And other than a little butter ... it is pretty healthy and definitely easy to prepare."

Step by Step Method
Step 1
Potatoes, Onions and Leeks ... In a large saute pan, add the butter and melt on medium heat. Add in the potatoes, leeks, onions, garlic, and red pepper and saute a couple of minutes. Then, add 1/2 cup of broth, cover and simmer until the vegetables are tender - about 5-7 minutes.
Step 2
Finish ... Add the spinach, additional broth (if necessary), all purpose seasoning, salt and pepper and toss well to combine all the vegetables and spinach. The spinach will take about 3-4 minutes to wilt down.
Step 3
Serve ... ENJOY! This really is a wonderful side dish which goes with pretty much anything. Perfect with grilled steak or pork chops happen to be my favorites.
