Step 1: Potatoes, Onions and Leeks ... In a large saute pan, add the butter and melt on medium heat. Add in the potatoes, leeks, onions, garlic, and red pepper and saute a couple of minutes. Then, add 1/2 cup of broth, cover and simmer until the vegetables are tender - about 5-7 minutes.
Step 2: Finish ... Add the spinach, additional broth (if necessary), all purpose seasoning, salt and pepper and toss well to combine all the vegetables and spinach. The spinach will take about 3-4 minutes to wilt down.
Step 3: Serve ... ENJOY! This really is a wonderful side dish which goes with pretty much anything. Perfect with grilled steak or pork chops happen to be my favorites.
