Step by Step Method

Step 1

Cook pasta in heavily salted boiling water until al dente.

Step 2

Last 3 minutes add spinach.

Step 3

Drain saving 1/4 cup water.

Step 4

Sauce: add lemon juice all over cut mushrooms.

Step 5

Heat butter and add mushrooms, cook until light brown, season lightly.

Step 6

Add garlic and wine, and cook for a couple of minutes.

Step 7

Add pasta water and cream.

Step 8

Simmer, don't boil.

Step 9

Add pasta and cook until tight.

Step 10

Season to taste.

Step 11

Add parmesan and toss.

Step 12

Cracked black pepper, to taste
