"Marsala wine gives a lovely mellow flavour to this recipe. I like to really brown the onions with the mushrooms before adding the wine. Lovely way to enjoy spinach."

Step by Step Method
Step 1
Add the onions to a lightly oiled wok or skillet.
Step 2
Cook them over mediunm heat, stirring often until they are golden total time about 15 minutes.
Step 3
After 10 minutes add mushrooms.
Step 4
Season with salt and pepper.
Step 5
Add Marsala for the last 5 minutes.
Step 6
Continue giving the onions & mushrooms a stir until the Marsala has almost all evaporated.
Step 7
Add spinach, mix well with the onions and mushrooms.
Step 8
Cook only until the spinach has wilted about 5 minutes.
Step 9
Serve hot.
