Ingredients

The ingredients are:
  • 1 bag (10 ounce) baby spinach
  • 1 sweet onion, chopped (large)
  • 3 ounces mushrooms (sliced, fresh)
  • Salt and pepper to taste
  • 3 ounces marsala

How to Make

  • Step 1: Add the onions to a lightly oiled wok or skillet.

  • Step 2: Cook them over mediunm heat, stirring often until they are golden total time about 15 minutes.

  • Step 3: After 10 minutes add mushrooms.

  • Step 4: Season with salt and pepper.

  • Step 5: Add Marsala for the last 5 minutes.

  • Step 6: Continue giving the onions & mushrooms a stir until the Marsala has almost all evaporated.

  • Step 7: Add spinach, mix well with the onions and mushrooms.

  • Step 8: Cook only until the spinach has wilted about 5 minutes.

  • Step 9: Serve hot.
