Step 1: Add the onions to a lightly oiled wok or skillet.
Step 2: Cook them over mediunm heat, stirring often until they are golden total time about 15 minutes.
Step 3: After 10 minutes add mushrooms.
Step 4: Season with salt and pepper.
Step 5: Add Marsala for the last 5 minutes.
Step 6: Continue giving the onions & mushrooms a stir until the Marsala has almost all evaporated.
Step 7: Add spinach, mix well with the onions and mushrooms.
Step 8: Cook only until the spinach has wilted about 5 minutes.
Step 9: Serve hot.
