"This is a really easy and simple way to prepare chicken, that is great to serve when you are having dinner guests. Tip Alert-This chicken has a spicy kick using the amount listed for the Cajun Seasoning. If you want it less spicy, use less Cajun Seasoning and more breadcrumbs. If you substitute Tony Chachere's Cajun Seasoning BEWARE, it contains lots of salt, so cut down on the amount of Cajun seasoning you use, or make the coating with even amounts of Parmesan cheese and Panko bread crumbs instead."

Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Prepare Cajun seasoning. Mix well.

Step 3

If making with fresh spinach - Add spinach to a pot of lightly salted boiling water, and boil for about 10-15 minutes until spinach is tender and dark green. Strain all the water. If spinach is in long strips, chop it into smaller pieces.

Step 4

Stuffing - Squeeze the spinach to remove as much water as possible.

Step 5

Mix together cooked spinach, Pepper Jack cheese and cream cheese (or Greek yogurt). If needed, you can heat them in microwave until melted together. Mix well.

Step 6

Chicken - Combine Cajun seasoning and bread crumbs and sprinkle both sides of your chicken breast with Cajun Seasoning.

Step 7

Add a spoonful of the spinach/cheese mixture to the middle of the chicken and roll the chicken up to envelop the spinach/cheese mixture.

Step 8

Use a toothpick in the center of each breast to hold the roll together. (You can use one on each end also).

Step 9

Place breasts in a pan, and put in the oven. (You can cover with aluminum foil to help hold in moisture if you want to).

Step 10

Bake at 350 degrees F for 18-25 minutes, until chicken is cooked thoroughly and juices run clear.

Step 11

Once cooked, remove toothpicks and serve.

This is one of those recipes that you learn to treasure right off the bat. It makes a delicious entree that is good enough to serve to company when you want to make something extra good. I have passed on the recipe to several other people and the ones that have tried it have reported back that it is amazing! We agree whole-heartedly!

The chicken tasted extra good tonight. I tripled the recipe to feed six. The chicken was super juicy and the spinach filling was awesome! My girls went home with the recipe to make for their husbands. It was a family winner!

This is delicious! I used the cream cheese and some Cajun spice I already had made up. I love that these are baked and not fried. I think the stuffing mix would work in some sole or stuffed flounder also. Thanks for this keeper.
