Step 1: Preheat oven to 350 degrees F.
Step 2: Prepare Cajun seasoning. Mix well.
Step 3: If making with fresh spinach - Add spinach to a pot of lightly salted boiling water, and boil for about 10-15 minutes until spinach is tender and dark green. Strain all the water. If spinach is in long strips, chop it into smaller pieces.
Step 4: Stuffing - Squeeze the spinach to remove as much water as possible.
Step 5: Mix together cooked spinach, Pepper Jack cheese and cream cheese (or Greek yogurt). If needed, you can heat them in microwave until melted together. Mix well.
Step 6: Chicken - Combine Cajun seasoning and bread crumbs and sprinkle both sides of your chicken breast with Cajun Seasoning.
Step 7: Add a spoonful of the spinach/cheese mixture to the middle of the chicken and roll the chicken up to envelop the spinach/cheese mixture.
Step 8: Use a toothpick in the center of each breast to hold the roll together. (You can use one on each end also).
Step 9: Place breasts in a pan, and put in the oven. (You can cover with aluminum foil to help hold in moisture if you want to).
Step 10: Bake at 350 degrees F for 18-25 minutes, until chicken is cooked thoroughly and juices run clear.
Step 11: Once cooked, remove toothpicks and serve.
