"I came up with this when I felt like chicken wings and just wanted to use what I had on hand, I used the chilli flakes as I like a bit of heat. You could also use thighs or drumsticks on the bone and just adjust the cooking time."

Step 1
Preheat oven to 175C.
Step 2
Disjoint the wings and either save and freeze tips (I do) to make stock at a later date or discard.
Step 3
Mix plum sauce and hoisin sauce in a small jug and add chilli flakes and mix up if using.
Step 4
Line a rimmed baking sheets with aluminium foil (I use two layers) and place wings in a single layer in the lined sheet tray and spoon a little of the sauce over each wing part and then put in the oven and bake for 45 minutes (this could be more or less depending on the size of your wings).
