"Here's another recipe from the Stray Rescue fundraising cookbook I purchased at a Goodwill store. This recipe was submitted by Jennifer Blome, a TV news anchor. The only change I made is that the original recipe calls for boneless skinless chicken thighs, and I'm also allowing chicken breasts, though they might need just a few more minutes of cook time. I don't keep red pepper in the house so I'll leave it out, but I think most will want to include it to get the sweet and spicy flavor right."

Step by Step Method

Step 1

Preheat oven to 400 degrees.

Step 2

Combine spices (garlic powder to red pepper) in a large bowl. Add chicken and toss to coat.

Step 3

Mix honey and vinegar together, and pour over chicken. Place chicken in dish coated with cooking spray.

Step 4

Roast for 35-40 minutes or until the chicken poked in the thickest spot has clear (not pink) juices.

This was a very flavorful chicken! I loved the spice combination and the complementing honey. I might try this with bone-in chicken, cooking it a bit longer to accommodate, as I think it would work really well with this flavor profile and method. Thank you!

I loved the side of the chicken with the spice rub on it. The bottom of our chicken I couldn't taste anything. Our chicken thighs put out a ton of liquid so the wonder sauce we put over them couldn't be tasted or the rub on the bottom of the chicken. The liquid was about a 1/2 inch thick. Not your fault at all. I will try this with a different brand of chicken thighs.

Fundraiser Cookbook recipes have real winners, and this one is one of them! I used chicken thighs, we love spicy so yes to the red pepper. Enjoyed, next time giving it a go in my Cosori Insta Pot!

Made as written, with chicken thighs. The cider vinegar made the honey thinner, and easier to coat the chicken, but it did not detract from the taste of the dish. I did not perceive the spices as too heavy, nor the sauce too sweet. All in all, it was quite pleasing! Served with Cilantro Rice and steamed broccoli.
