"These wings need a minimum of 2 hours (up to overnight) to marinate, and that time isn't included in the prep or cook times. If you don't want spicy wings, omit the cayenne. I have also used lime with this, and it's a little bit different from the lemon but still good."

Step by Step Method

Step 1

In a bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, dried oregano, ground coriander, cayenne pepper, salt, and black pepper to make the marinade.

Step 2

Place the whole chicken wings in a large zip-top bag or a shallow dish. Pour the marinade over the wings and toss well to coat them evenly. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results. Allow the wings to marinate and absorb the flavors.

Step 3

Preheat the grill to medium-high heat. Remove the chicken wings from the marinade and let any excess marinade drip off.

Step 4

Place the wings on the grill and cook for about 12-15 minutes per side, or until they are cooked through and nicely charred. Ensure the internal temperature of the wings reaches 165°F (74°C).

Step 5

Transfer to a serving platter. Garnish with fresh parsley, if desired.

Step 6

Serve with lemon wedges on the side for squeezing over the wings, if desired. (I think the citrus balances out some of the heat.)

We loved the spice level and the char from grilling on these wings. I marinated for about 2 hours. This recipe is a great way to enjoy wing night without having to heat up your oven. Delish!

My wife made these twice now. The first time they sat in the marinade overnight and they were amazing with a bit of extra hot sauce. The second time they sat in the marinade for a little over a couple of hours, they were not a tangy, so keep these in the marinade for a while.
