Step 1: In a bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, dried oregano, ground coriander, cayenne pepper, salt, and black pepper to make the marinade.
Step 2: Place the whole chicken wings in a large zip-top bag or a shallow dish. Pour the marinade over the wings and toss well to coat them evenly. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results. Allow the wings to marinate and absorb the flavors.
Step 3: Preheat the grill to medium-high heat. Remove the chicken wings from the marinade and let any excess marinade drip off.
Step 4: Place the wings on the grill and cook for about 12-15 minutes per side, or until they are cooked through and nicely charred. Ensure the internal temperature of the wings reaches 165°F (74°C).
Step 5: Transfer to a serving platter. Garnish with fresh parsley, if desired.
Step 6: Serve with lemon wedges on the side for squeezing over the wings, if desired. (I think the citrus balances out some of the heat.)
