Step by Step Method

Step 1

In a large pot over medium high heat combine first 5 ingredients (-cinnamon sticks); bring to a boil. Reduce heat to low and add the vanilla bean; cover and simmer for 15 minutes. Remove from heat and let stand at room temperature for 1 hour or up to 4 hours. Discard solids. Stir in juice.

Step 2

Reheat over medium heat (or put in slow cooker) until warm.

A nice variation on our usual cider. I often use star anise but had never used a vanilla bean. Nice addition. I liked the tartness of this. I don't care for added sugar in my hot cider.
