Step by Step Method
Step 1
Heat a large shallow pan on a low heat.
Step 2
Cook the Spanish chorizo and paprika in the olive oil for a few minutes, until it releases its fat and colors the oil.
Step 3
Add the pasta, garlic and red pepper.
Step 4
Stir to combine, then turn up the heat to medium and cook the pasta in the chorizo fat for five minutes, until toasted and lightly browned.
Step 5
Stir in the tomatoes and cook for five minutes
Step 6
Then add the stock and chickpeas.
Step 7
Bring to a simmer and cook for about 10 minutes, until the pasta is just cooked, add in water as needed.
Step 8
Season, stir in the parsley and spring onions.
