Step 1

In large soup pot brown ground beef, add onions and celery simmer until tender, stirring frequently.

Step 2

Add remaining ingredients except tomatoes.

Step 3

Bring to boil, reduce heat simmer 30 minutes or until vegetables are done.

Step 4

Add tomatoes and simmer for another 10 minutes

Step 5

Serve with freshly baked bread or crusty rolls for a hearty meal.

Step 6

I made this using home made beef stock I had in freezer so I omitted the beef bouillon as it was not needed then followed recipe as listed. I also tossed in a bit of green pepper and plum tomato that had to be used up. This made for a fantastic belly warming soup. Great recipe Gerry!!

Delicious and perfect for a crisp, fall day! I especially enjoyed the hint of bay leaf which brought to mind the soups my Grandmother made on the farm. This is a keeper. Thanks Gerry!
