Ingredients

The ingredients are:
  • 1 tablespoon oil
  • 2 pounds ground beef
  • 2 cups chopped yellow onions
  • 2 cups chopped celery
  • 4 cups beef broth
  • 4 cups water (hot)
  • 2 cups chopped carrots
  • 2 cups chopped potatoes
  • 2 teaspoons salt (or to taste)
  • 1/4 teaspoon freshly ground pepper (I use more)
  • 2 teaspoons beef concentrate ( I use beef bouillon cubes)
  • 2 bay leaves
  • 1/8 teaspoon basil (or to taste - I often use thyme instead)
  • 4 cups diced tomatoes (or 4 cups canned - when using canned I use diced or plum)

How to Make

  • Step 1: In large soup pot brown ground beef, add onions and celery simmer until tender, stirring frequently.

  • Step 2: Add remaining ingredients except tomatoes.

  • Step 3: Bring to boil, reduce heat simmer 30 minutes or until vegetables are done.

  • Step 4: Add tomatoes and simmer for another 10 minutes

  • Step 5: Serve with freshly baked bread or crusty rolls for a hearty meal.

  • Step 6: Freezer friendly!
