Step by Step Method

Step 1

Saute the carrots, potatoes, and onion in 2 Tblsps olive oil until caramelized and just starting to get tender. Remove from skillet and keep warm.

Step 2

Combine seasonings and rub on both sides of chicken.

Step 3

Add additional olive oil and butter to the skillet, and sear the chicken. (But not cooked all the way through) Remove from the skillet to a plate.

Step 4

Return the veggies to the skillet, place the chicken on top. Lower heat, cover and continue cooking for about 30 minutes until the chicken is fully cooked and the veggies are tender.

Step 5

(Keep an eye on the chicken during the 30 minute cooking time and add some water if necessary. Placing the chicken on top of the veggies means that the chicken juices add more flavor to the vegetables)

Holy Paprika! This is over the top DELICIOUS! Don't let the simplicity of ingredients and preparation deceive you...this is SUPER FLAVORFUL. I think the secret is the smoked paprika and the chicken juices sinking into the veggies. It is a rare meal that gets 5 stars both from my Hubby and Mom, and this one did. A definite keeper! I did make a few changes: I used small russet potatoes, frozen b/s chicken breasts and added garlic salt. I didn't need the second two tablespoons of oil or butter. While I was cooking the veggies, I partially cooked my frozen chicken breasts on my Foreman grill, then I rubbed them with the spices. I sprinkled garlic salt and pepper all over the veggies, poured the juices that were released from the chicken over the potatoes, stirred it and then topped with the spiced chicken and proceeded as directed. There are no leftovers, I wish there were. Made for the Billboard recipe tag game. Freddy Cat says thanks for the chicken!
