Ingredients

The ingredients are:
  • 4 tablespoons olive oil
  • 1 tablespoon butter
  • 3 large carrots, peeled and cut into chunks
  • 5 baby Yukon Gold potatoes, quartered
  • 1 large onion sliced
  • 3 to 4 boneless skinless chicken breasts
  • 1 (heaping) teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

How to Make

  • Step 1: Saute the carrots, potatoes, and onion in 2 Tblsps olive oil until caramelized and just starting to get tender. Remove from skillet and keep warm.

  • Step 2: Combine seasonings and rub on both sides of chicken.

  • Step 3: Add additional olive oil and butter to the skillet, and sear the chicken. (But not cooked all the way through) Remove from the skillet to a plate.

  • Step 4: Return the veggies to the skillet, place the chicken on top. Lower heat, cover and continue cooking for about 30 minutes until the chicken is fully cooked and the veggies are tender.

  • Step 5: (Keep an eye on the chicken during the 30 minute cooking time and add some water if necessary. Placing the chicken on top of the veggies means that the chicken juices add more flavor to the vegetables)
