Step by Step Method

Step 1

Overlap 3 slices of the salmon lengthwise on a piece of plastic wrap. Then overlap 3 more slices to form an 8-inch-long piece.

Step 2

Put the cheese, walnuts, chives, 1 tablespoon of chopped dill in a mixing bowl and mash until well blended, adding a little of the cream if the mixture is too thick. Add a pinch of pepper.

Step 3

Take half of the cheese mixture and place lengthwise down the salmon on one side. Roll up carefully, close the top ends like a sausage, and wrap the sheet of plastic around the outside. Repeat with the remaining salmon slices and filling. Refrigerate 6 hours or overnight.

Step 4

When ready to serve, remove the plastic wrap and cut through with a knife at 2-inch intervals.

Step 5

Place 2 cut pieces open-side-down on a plate and serve with a splash of the dill sauce.

The goat cheese really pairs with the smoked salmon, and lends a tang that surprisingly matches. The amount of walnut is small, but still gives it a subtle niceness. Topping these with capers would probably be a good add.

These are fabulous! I cut the recipe back and made a fairly slim roll, cut it into 8 pieces and placed each piece on a plain rice cracker - excellent. I will make these soon again to accompany our Sunday Martini. 10 Oct 16 Made again - I love Lox then add goat cheese etc and you have a heavenly appetizer. make. This time I made 3 little rolls (easy to handle) and cut them into bite size pieces, served as finger food. I think a squeeze of lemon would go nicely ! Thanks for an appetizer that was enjoyed by all
