"My sister got me turned me on to sushi while 6 of us were on a family cruise together many yrs ago. I like it, but admit I've never made it. Since Culinary Quest #3 was "visiting" Japan again this yr, I decided I should have a recipe for it. It was more a sense of NEED than a sense of WANT, but then I found this recipe (from GOOD FOOD MAGAZINE) & another that follows it to raise that WANT level. They both use avocado & smoked salmon - 2 of my most-favored ingredients. I hope some of my travel buddies will find them worth a try. Prep time was not given & was estimated by me. (Yield is "32 healthy little bites, ideal for canapés" @ 2 per person = 16 servings) ENJOY!"

Step by Step Method

Step 1

Put the rice in a sml pan w/600 ml water (2 1/2 cups). Bring to a boil & cook for 10 mins until the water is absorbed & the rice is tender. Stir through the vinegar & sugar, cover & allow to cool.

Step 2

Skin, stone & slice the avocado. Put it into a bowl & drizzle over the lemon juice, turning the avocado to ensure the pieces are covered.

Step 3

Divide the rice between the nori sheets & spread it out evenly, leaving a 1 cm (1/2 in) border at the top & bottom. Lay the salmon over the rice, then the chives & finally position the avocado across the center.

Step 4

Fold the bottom edge of the seaweed over the filling, then roll it up firmly. Dampen the top border w/a little water to help it seal the roll. Repeat to make 4 rolls. Now the rolls can be wrapped individually in cling film & chilled until ready to serve.

Step 5

Using a serrated knife, cut ea roll into 8 rounds. Serve w/sweet soy sauce for dipping.

How good and beautiful! We all (8 of us) appreciated these very much and we enjoyed our Japanese dinner with these sushi rolls. I loved the idea to use smoked salmon as this is naturally preserved and safe! I could make 12 slices from each roll for a total of 48 bites! Really a great recipe and a real keeper! Thanks a lot Twisses! HUGS!
