Step by Step Method
Step 1
Cook the potatoes in boiling salted water, 15 to 18 minutes or until tender; drain and return to pot. Smash potatoes coursely with the back of a large spoon; stir in dressing.
Step 2
Set aside 2 tablespoons cheese and 1 tablespoon green onion. Add remaining cheese and onion to potatoes and jalepeno if using, carefully stir just until combined. Top with the reserved cheese and onions. Serve hot.
