Ingredients

The ingredients are:
  • 1 1/2 pounds Yukon gold potatoes, quartered, about 5
  • 1/3 cup three cheese ranch dressing
  • 1/2 cup sharp cheddar cheese, grated, divided
  • 2 green onions, finely chopped, divided
  • 2 tablespoons jalepeno pepper, seeded and chopped (optional)

How to Make

  • Step 1: Cook the potatoes in boiling salted water, 15 to 18 minutes or until tender; drain and return to pot. Smash potatoes coursely with the back of a large spoon; stir in dressing.

  • Step 2: Set aside 2 tablespoons cheese and 1 tablespoon green onion. Add remaining cheese and onion to potatoes and jalepeno if using, carefully stir just until combined. Top with the reserved cheese and onions. Serve hot.
