Step by Step Method

Step 1

You need a container with a lid that is large enough to fit the 1 cup of strawberries. Place the strawberries in the container. Cover them with sugar to taste. How much sugar entirely depends on how sweet your strawberries are. Mix it well. Put the lid on and leave on the countertop overnight. There is no need for refrigeration.

Step 2

The next day, get a pint sized (16 ounce) jar with a lid. Put in the strawberries, vinegar, olive oil,maple syrup and the thyme.

Step 3

Use a hand blender and blend it. You can leave some chunks of strawberries if you desire. Take a taste. Add sugar to taste if desired. It's now ready.

Step 4

NOTE: If you have no hand blender, feel free to use a regular blender.

So easy and so lovely! Great dressing that I used over a wedge which was inspired by JostLori’s awesome picture. I added some diced red onions over the wedge which went perfectly. I did run the dressing through the blender as indicated and left some of the strawberries chunks whole. Very good! Thank you, WAIGEN, for sharing. Made it for FYC.

I give this one TEN stars! Because I had some strawberries that weren't going to last another day, I decided at the last minute to make this dressing. So I wasn't able to follow the directions exactly. Basically, just put all the ingredients in a pint mason jar with a lid and shook it until the dressing was smooth. I left the strawberries in chunks. Used very little sugar - maybe 1/2 teaspoon tops. Served it over wedges of iceberg lettuce garnished with mint. The flavor is out-of-this-world good!
