Step by Step Method

Step 1

Peel and slice garlic cloves. Cut chicken into pieces, or use thighs. Put in large bowl with bay leaves, thyme, and garlic. Pour enough wine over chicken to cover. Cover with plastic wrap and marinate in refrigerator overnight.

Step 2

Dice bacon. Fry until crisp. Remove to paper towel. Saute mushrooms in bacon drippings, adding oil or butter if needed, until they begin to brown.

Step 3

Remove chicken from marinade, reserving marinade. Pat chicken dry with paper towel. Brown chicken pieces in oil or butter, on all sides.

Step 4

Peel and slice carrots into 1/2 inch pieces. Put onions and carrots in bottom of slow cooker. Add chicken, mushrooms and bacon . Stir tomato paste into 2 cups of wine marinade (with garlic pieces and bay leaves) and pour over all. Discard remaining marinade. Cover and cook on low setting 6 hours.

Step 5

Remove chicken to platter and keep warm. Stir cornstarch into 1/4 cup water and add to sauce. Turn slow cooker to high and cook until thickened. (You may want to use more cornstarch, depending on how thick you want gravy.) Stir in salt and pepper to taste. Return chicken to pot and serve with mashed potatoes or rice.

I halved the recipe using 6 thighs with a total weight of just under 1K about 2lb which was plenty for 3 of us. I could only marinate for 5 hours before it going into the crock pot and cooked for 4 hours on low and 1 hour on high. The chicken was very tender but the flavour was o'kay to me but the DM who declared she was not really hungry which usually means she just plays with her food and hardly eats anything but she took one taste and gobbled up the lot as did the DS. I made this for Sunday dinner and I really enjoyed it with the chicken. The meat was so tender from the slow cooking. The flavor of the meat was just delicious! I added in potatoes and then followed the recipe exactly and was so happy with the results. I served it with a nice crusty roll for a nice hearty and delicious meal.
