Step by Step Method

Step 1

Cook the beans in lightly salted water until tender crisp, then drain, and drop into an ice water bath to stop the cooking process. Cut the garlic into thin slivers, and core and seed the tomatoes. Cut the tomatoes into 1/2 inch dice. Drain the beans.

Step 2

Heat the oil in a pan, and once it is hot add the garlic. Cook for just a minute or two, and add the tomatoes and beans, and cook for another minute or two, carefully stirring the mixture to coat the beans evenly with the tomato and garlic mixture.

Step 3

Remove from the heat, and add the fresh, chopped herb, and season with the salt and pepper. Serve warm or at room temperature.

this was a very tasty side with our roast chicken and so colourful! Love the combination of green beans and tomato, i had some grape tomatoes i had to use up, worked very nicely. love the garlic finish and parsley too, thanks for posting i will be making these again!

I love green beans and this recipe goes to the top of my list. Great flavour. I followed the recipe except I only used a spray of olive oil. This recipe will be made over and over again. Thanks Meggs your recipe added to my dining pleasure.
