"This salad is so easy to make and so attractive. If you wish to use this as a starter salad then it will serve two. Double and triple it as many times as you wish. I often use a bottled Raspberry Vinaigrette "Everything Done Right" "Toasted Pecan Raspberry Vinaigrette". The vinaigrette recipe I have posted here makes 1/2 cup and will keep for months in your fridge. Two tablespoons equals less than 10 calories. The vinaigrette recipe is from Cooks.com. Step by Step Method

Step 1

You may toss the spinach, strawberries and grapes together but I like to see them nicely arranged on a plate. The spinach goes on the plate first then arrange the grapes and strawberries over it.

Step 2

Combine all the vinaigrette ingredients, mix well refrigerate in a jar with a tight fitting lid

Step 3

Just before serving, shake the vinaigrette and drizzle as much as you like over your salad. Save remaining dressing in the fridge for the next time

I could not find raspberry vinaigrette so I used 1/4 teaspoon raspberry jam mixed with 1/4 teaspoon of vinegar and followed directions as listed. This turned out great!!! I served this to a bunch of my girlfriends for a girl's night in pot-luck dinner and they all loved it. Made for the Billboard Recipe Tag Game.
