Step by Step Method
Step 1
Empty the yolks from the eggs into a medium bowl and mash with a fork. Rough chop the shrimp, saving 6 to set aside for garnish, add the chopped shrmip, chopped spinach, mayonnaise, mustard, salt and cayenne pepper to the egg yolks; mix well to combine.
Step 2
Fill the egg white halves each with equal amounts of the yolk mixture. Cut each of the saved shrimp in half and place one half shrimp on top of each filled egg half. Sprinkle the chopped pecans over, refrigerate until serving.
