Ingredients

The ingredients are:
  • 1 frozen 9 inch pie crust , thawed and pricked with fork
  • 1 tablespoon olive oil
  • 1 medium shallot, thinly sliced
  • 8 ounces sliced deli ham, roughly chopped
  • 4 eggs
  • 1/2 cup swiss cheese, shredded
  • 1/2 cup gruyere cheese, shredded
  • 1 1/2 teaspoons herbes de provence, divided
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon dijon mustard
  • 1 cup heavy cream
  • 1 teaspoon salt

How to Make

  • Step 1: Preheat oven to 400°F.

  • Step 2: Bake pie crust 10 minutes. Meanwhile, in large skillet, heat olive oil over medium heat. Add shallot and saute 2 minutes or until translucent. Add ham and cook 3 minutes or until all moisture has evaporated.

  • Step 3: Remove crust from oven and lower temperature to 325°F. Add ham and shallot mixture to crust. In mixing bowl, combine eggs, both cheeses, 1/2 teaspoon herbes de provence, cayenne pepper, dijon mustard, heavy cream and salt. Pour into crust and bake 45 minutes or until quiche is firm.

  • Step 4: Garnish with remaining 1 teaspoon herbes de provence and enjoy, refrigerating any leftovers.
