Step 1: Preheat oven to 400°F.
Step 2: Bake pie crust 10 minutes. Meanwhile, in large skillet, heat olive oil over medium heat. Add shallot and saute 2 minutes or until translucent. Add ham and cook 3 minutes or until all moisture has evaporated.
Step 3: Remove crust from oven and lower temperature to 325°F. Add ham and shallot mixture to crust. In mixing bowl, combine eggs, both cheeses, 1/2 teaspoon herbes de provence, cayenne pepper, dijon mustard, heavy cream and salt. Pour into crust and bake 45 minutes or until quiche is firm.
Step 4: Garnish with remaining 1 teaspoon herbes de provence and enjoy, refrigerating any leftovers.
