Step by Step Method

Step 1

Preheat oven to 500 degrees F. Line a rimmed baking sheet with foil.

Step 2

In a cast iron skillet over high heat one tablespoon oil. Sprinkle salmon fillets evenly with 1/2 teaspoon salt and 1/2 teaspoon pepper. Add fillets to skillet and cook 4-5 minutes on one side.

Step 3

Place fillets, seared side up, on prepared baking sheet and bake for 4-5 minutes or until desired degree of doneness is reached.

Step 4

Return skillet to medium high and add remaining 1 1/2 teaspoons oil to pan and add shallots and saute for 2 minutes. Add remaining 1/2 teaspoon salt, 1/2 teaspoon pepper, tomatoes and 1/3 cup basil and cook 2 minutes or until tomatoes begin to break down. Stir in vinegar and cook 1 minute.

Step 5

Place one fillet on each of 4 plates and top with tomato mixture and remaining basil.

Yep! This is a 5 star dish...I loved the tomato/shallot mixture...it offers a touch of sweetness which complemented the salmon...I was so impressed with the cooking technique of the salmon I think I'll prepare my salmon this way in the future...it came out perfect...made for Best of 2018 based on ForeverMama's recommendation...

5 stars and into my Best of 2019 file. This salmon became an instant favorite! The searing/oven technique worked beautifully and my husband enjoyed the salmon just like that. I loved the tomato, basil, shallot, balsamic topping. It was delicious and the perfect complement to the salmon. This was lovely served over brown rice with a veggie and salad for sides. Thank you!

5 Stars All The Way! All the flavors together are superb. I also love the method of which the salmon is seared on one side and then finished off in a hot oven; it came out perfectly done. This is a simple and quick dish that is perfect for a quick weeknight meal and elegant enough to serve for company. Made it for Billboard Tag. Thank you ellie for sharing.
