Step by Step Method

Step 1

Put whole potatoes in a large pot.

Step 2

Cover with cold water.

Step 3

Cook potatoes over medium-high heat until fork tender.

Step 4

Drain the potatoes and cool.

Step 5

Once cool, peel and chop into 1/2-inch cubes.

Step 6

In a large bowl,

Mix together chopped celery, chopped onions, hard boiled eggs, sweet pickle relish, mayonnaise, salt, black pepper, and dry mustard.

Gently stir in potato cubes.

Sprinkle with some dried parsley and paprika.

Chill in the refrigerator overnight before serving.

This was a wonderful potato salad. My kids always complained because I put sliced black olives in mine, which is how my Grams taught me to make it. I would tell them just pick them out! Geez! But they're in their 30s and 40s now and they still hate olives, so you can imagine how pleased they were with this potato salad! I did add about a tablespoon of cider vinegar with a little sugar mixed in. Everybody loved it and it will be my go-to! Great recipe, Dee!

I made half a batch and wish I'd made the full amount - this was wonderful potato salad! I added just a splash of seasoned German vinegar (Salata) b/c my potatoes were russets, which tend to be mealier and drier than red potatoes. I think the sweet pickle relish put it over the top! Both DH and I loved it! Added to my Best of 23 file!

I cut this down to serve four. Great combination, but we definitely needed more salt and mayonnaise. It is so hot here right not, I just couldn't have a hot side tonight!
