"A slightly modified version of a recipe from my mother."
Wash and trim beans and cut in half.
Heat oil in saucepan, peel garlic and cook till golden. Remove and discard garlic.
Add onions and green pepper, cook slowly 3 minutes.
Add remaining ingredients except for the cheese, cover, cook slowly 15 minutes or till beans are crisp-tender.
If using Parmesan, stir in half the cheese.
Turn the mixture into a serving dish and sprinkle with the remaining cheese if desired.
