Step 1: Wash and trim beans and cut in half.
Step 2: Heat oil in saucepan, peel garlic and cook till golden. Remove and discard garlic.
Step 3: Add onions and green pepper, cook slowly 3 minutes.
Step 4: Add remaining ingredients except for the cheese, cover, cook slowly 15 minutes or till beans are crisp-tender.
Step 5: If using Parmesan, stir in half the cheese.
Step 6: Turn the mixture into a serving dish and sprinkle with the remaining cheese if desired.
